Great Salads for a BBQ – Berry Piña Colada Salad

Merek’s mom has a great Tropical Salad recipe that we slightly modified to become more of a Berry Salad this summer. We first had a version of this salad the summer we were first dating, so it has a bit of happy nostalgia surrounding the dish as well.

This salad brings happy spring and summer feelings and will want you coming back for multiple servings of this sweet treat. (Yes, it’s sweet enough to almost be a treat, but plot twist: it’s a salad!) It’s great for BBQ’s, baby showers, or a summer evening that needs a nice cool side with beautiful presentation.

Pina Colada Vinaigrette

Ingredients:
½ cup sugar
1/3 cup pina colada liquid drink mix
1/3 cup apple cider vinegar
½ tsp ginger
1 tsp dry mustard
½ tsp salt
1 ¼ c. vegetable oil

Instructions:
In a blender combine all the ingredients, except the oil. Blend until light and
frothy. Add oil in steady stream. Store in a blender bottle or salad dressing bottle that allows you to refrigerate and then shake as needed. We recommend refrigerating the dressing for at least a few hours before serving.

Berry Salad Base

Ingredients:
Lettuce – romaine and spring mix (or just chopped romaine)
Blueberries
Raspberries
Strawberries
1/4 cup of Sweetened Coconut flakes

Instructions:
Layer the lettuce mix, then a layer of mixed berries, another layer of lettuce and top with remaining berries. Top with coconut flakes on top.
